Ingredients: 3 Tbsp. - soy sauce 2 Tbsp. - rice vinegar 1 tsp. - sugar 2 tsp. - olive oil ½ tsp. - minced garlic ¼ tsp. - black pepper 2 cups - Cucumber sliced finely 2 cups - Carrots sliced finely Method: Combine all the ingredients except the carrots and cucumbers in a large bowl, stirring well with a whisk. Add the carrots and cucumbers and toss well.
